Ice'land'ic is a good contrast with the salmon leaping to the sky. Even though poppy is a noun, it suggests a pop up action that precedes the salmon's leap. Also like the suggestion of a flower opening and the salmon seeming to spring out of nowhere.
Since I wasn't familiar with the Iceland poppy, I looked it up on the internet. I found that the flower has a short life and comes in shades of white, yellow and salmon.
